Serves 4

Ingredients:
4 Quarts Water
1 Medium Onion, chopped
2-4 Carrots, chopped into ¼ inch slices
3 Stalks of Celery, chopped into ¼ inch slices
1 Pound of Okra, roughly chopped
1½ Pound Tomatoes, chopped into medium sized chunks
3 Cobs of Corn, chopped into 1-2 inch pieces
1-2 Thai Chili Peppers, finely chopped
½ Cup Fish Sauce
½ Cup Mint Leaves
1 Tablespoon Sugar
To Make The Soup
- In a large sauce pan over high heat bring the water to a boil
- Add the carrots, celery, onion, and garlic
- Cook for 10-15 min., or until the carrots start to soften
- Add all of the remaining ingredients
- Bring to a boil
- Turn down the heat and simmer for 15 more minutes
