Serves 2 to 4

Stir Fried Amaranth
Ingredients:
1 bunch of Amaranth, stems removed
6 Cloves of Garlic, chopped
1 Tablespoon Miso Paste
ΒΌ Cup Dehydrated Shrimp (optional)
2 Tablespoons Vegetable Oil
Instructions:
- Heat oil in a wok or large sautee pan over high heat.
- Add all ingredients and cook, stirring constantly, until amaranth is bright
green and wilted, about 2-3 minutes.
